Making Almond Milk

Happy Monday! It's fresh start day and a new week with lots of opportunities to add in doses of healthy living. What are your goals for this week?

Yesterday, I ran out of Almond Milk so I decided it was time to try making my own. We go through quite a bit of it every day in our morning oats, protein shakes and then Chloe has an afternoon bottle of 1/2 hemp & 1/2 almond milk. I usually purchase 40 cal Almond Breeze for about $2.99 so I can hardly contain my excitement after making my own yesterday for the price of about 20 almonds & a few medjool dates. And the shelf life of this is 3-4 days which a lot healthier than the shelf life of store bought.

Recipe:
1/2 cup raw almonds soaked in fresh water overnight (then rinse the almonds well)
4 cups fresh water
3 medjool dates or 2 Tbsp Agave
1 T Coconut oil (melted)
1 tsp Vanilla
1 Tbsp Hemp Pro Powder (optional)

Method:
Soak your nuts for 8 hrs then rinse well
Blend almonds with 4 cups water for 1 minute.
Pour the mix through a fine mesh strainer
all the almond pulp will separate out
Remove pits from 3 medjool dates and place in
blender with strained milk & all other ingredients
Pour into jars & store in the fridge for 3-4 days

So easy & nutritious!! I will definitely be doing this from now on. I think I purchased that massive bag of raw almonds from Costco for under $10.
Speaking of soaking, Mondays is usually the day that I soak everything I'll be using for meals during the week. The things I typically soak are:
~ 2 cups of quinoa
~ 2 cups of Black Beans
~ 2 cups of Chickpeas
~ 4 cups of Steel cut oats

Soaking helps aid in digestion, removes phytic acid (which prevents mineral absorption) & decreases cooking time. Generally you are going to soak beans & grains for between 4-8 hrs in water.

I plan to use all those soaked goodies in the following recipes this week:

~ Vegan Chunky Chili & Cornbread
~ Mafalde Pasta w/ Greens & Lemon
~ Eggless Spinach Quiche
~ Spanish Chickpea Balls & Rice
~ DIY Spelt Pizzas
~ Creamy Potato Fakin Bacon Soup
