Ultra Nutritious Vegan Banana Bread

All of this snowy weather lately has left me with no choice but to transform my recipes one at a time into vegan powerhouses.
And I kinda love having another excuse to put the kettle on in the afternoon for a bread like this....
I've cleaned up an old classic, gave it some vegan charm and left it sitting long enough to take a picture for you....Enjoy!

Ultra Nutritious Vegan Banana Bread:
- 3 ripe bananas
- 1/2 cup sucanat
- 1 tbsp molasses
- 2 tbsp chia seeds (for chia 'eggs')
- 2 tbsp coconut oil (melted)
- 2 tsp almond milk
- 1  cup oat flour*
- 1/2 cup coconut flour*
- 1/2 cup brown rice flour*
- 1 tsp cinnamon
- 1 tsp baking powder
- 1/4 cup dark choc chips or cacoa nibs
- 1/4 cup walnuts
*you can sub in any flour for these such as buckwheat, quinoa etc. Try to stay away from using wheat
Method:
Set oven to 350.Put nanners, sucanat, molasses, chia eggs, coco oil & milk in bowl and blend on low for 1 minute. Chia eggs work great as egg replacers and take on a gelatinous form after a few minutes. You simply add 2 tbsp chia seeds to 6 tbsp water and let sit for 3 min. In a separate bowl combine the flours, baking powder & cinnamon. {I added a bit of almond pulp to this mix that I had left over from making almond milk this morning}. Add the dry to the wet before before adding in the choc chips & walnuts. Mix everything gently and pour into loaf pan. Bake for 45--50 min.
