Vegan Meal Planning & Last Week's Best


Hello Monday! We love you even more today because you've given us the day off to either think of our President or our Family. We Canadians are choosing Family today. So after I take care of little work this afternoon, it's all about hanging out in the casa & ending the day with a some tacos & the very last episode of Friday Night Lights. The hubs & I kinda feel like we're experiencing the death of a close friend with this show being over - have you ever felt like that before? I digress....
Let's talk about some recipes shall we? Here's our meal plan for the week:

And now for the star of last week: Butternut Squash Mac n Cheeze with Black Beans & Seitan. That's a yummy mouthfull!
I made Seitan earlier in the day
Roasted the squash & added it to the Cheeze Sauce.
Most amazing sauce ever!
Boiled the brown rice pasta & added to a casserole dish.
Sprinkle the Black Beans & add chunks of Seitan
Pour Cheeze Sauce on top & Bake for 15 min
Delish.
Chloe approved.
And even more delish the next day!
This was hands down the very best Mac n Cheeze I have ever had! I added in the beans & seitan to bump up the protein a bit. Have you ever made Seitan? I'm going to feature it in an upcoming vlog newsletter as I've had a few questions about it before.
