A Sunday night that ends with both babes fast asleep by 9pm and a tea in my hand spells accomplishment if I do say so.
The highlight of our day was going to the garden center to pick out a few house-cleansing plants. Although our new house is a Leed certified "Green" home, there are still going to be toxins polluting our inside air with everything being so brand new.
As I've talked about before, the air inside all of our homes is typically 2-5 times more toxic than the outside air. One of the ways to combat this is to have green plants. And there are several that purify the air a little better. I love this little flow chart which illustrates it better:
As I mentioned last post, at the end of each week, I'm going to post the recipes I made up during the week and give each one a yay or nay. Here was the lineup for this past week:
~ Breaded Seitan & Hassleback Potatoes: I'm still trying to nail down the perfect seitan recipe, but this was definitely not it! I find seitan to be way too chewy and think it would be much better served as a roll or thin strips in a stir fry. The potatoes were great though and an interesting way to serve them up. I'm going to try this with sweet potatoes next time.
~ Sweet Potato Quinoa Cakes over salad: Loved these! And I had everything already in my fridge as leftovers so it was a simple way to use them all up.
~ Lentil Meatballs with Kamut Pasta: Another winner and super simple to make!
~ Quinoa Salad w/Spicy Peanut Dressing: I ended up adding in some cabbage and a bit of sesame oil to the dressing. Great version of an asian salad.
~ Toasty Pumpkin Chickpea Fitters with Rice. Everyone loved these. The pumpkin adds a nice sweetness and they crisp up really nice.
~ Mushroom Millet Soup: I made this the night of the Santa Claus Parade to warm up our bellies. Super delish & nutrish!
