This Week's Recipes & Reads

So I kind of made the most amazing nutty seedy granola bars today.

But since this post is all about the recipes & reads for the past week you'll have to wait just a little bit for that recipe ;)
I am however including in this post,  the recipe for the most amazing black bean cookies you will ever lay your tastebuds on. Don't fear the black bean - these cookies are mind blowingly delicious & nutritious!

~ Black Bean Choco Cherry Cookies (I added pecans on top)
~ Asian Noodle Salad w/ grilled tofu
~ Butternut Squash Mac n Cheeze ...this is OUTSTANDING! I laced it with black beans for extra protein & fiber.
~ Quinoa stuffed Acorn Squash w/ Garlic Cashew Bok Choy
~ Coconut Chickpea Curry

I hope these posts are helping you find some variety in your cooking. As you'll see - each week I try to make up dishes that use chickpeas, black beans & lentils.
I kind of have a thing for beans...here's a vid on my favourite way to cook em up!
A few times a month I'll use tofu & tempeh but I try to limit our consumption of soy products.
