B~Nut Squash Comfortoodles

It's cold out.
You've worked hard all day.
Maybe it's Maybelline. Oops wrong slogan....
... Because you're worth it.
There it is.

Perhaps you're struggling to find a meal that works for all the people pulling up a chair at your table. Well here it is. Dust your crockpot off and have this deliciousness ready to go 15 min after you get home from work.

1. Place a Butternut Squash in an inch of water in the crockpot and set it on low while you're at work {I had mine in for 7 hrs today...yeah, totally done!} Once home from work - be careful removing it. It will be very soft + hot! Let it cool before slicing and scooping out flesh.

Cook up brown rice or quinoa noodles

Add all sauce ingredients to your blender and blender up

The Sauce

1 1/4 cups water

1 cup nut mylk

2 cups cooked butternut squash

1 teaspoons miso paste, or extra salt

1/3 cup nutritional yeast

1 teaspoon sea salt, {more if not using miso}

1 garlic clove, minced

1 teaspoon onion powder

1/2 teaspoon dry mustard

1/2 teaspoon paprika

1/2 teaspoon turmeric

black pepper to taste 

Prep some kind of protein + topper option to go with it such as:

Veg Options: mushrooms, asparagus, sundried tomatoes, lentils, tempeh, spinach

Meat Options: crispy bacon crumbles, leftover chicken

Add noodles + sauce to pot and mix together/warm

Sit down and watch their expressions upon first bite.

Recipe makes about 4 cups of sauce and you'll only end up using about 1/2 of that for this recipe so grab a mason and freeze the rest for next time {Booya}
